The first thing I learned how to make in the kitchen is a Thai omelette or kai jeow in Thai. If you’re looking for comfort food that has minimal prep and takes less than 15 minutes to make, this is the dish! I grew up eating this at home and it’s very nostalgic when I make it. It’s very savory: imagine an omelette with an umami flavor. One of the ways this dish differs from your traditional omelette is the addition of fish sauce. Fish sauce is basically anchovy extract. The fish is coated in salt and allowed to ferment and the sauce is collected. I know, this sounds unappetizing but it’s actually delicious if used well since it adds notes of salty and sour to an otherwise bland dish.
This Thai omelette is super easy to make as it only really needs three ingredients: Eggs, fish sauce, and fresh ground black pepper. If you would like to make it sweet you may add a little sugar or if you want it a little sour you can add a quick squeeze of lime juice. If you like spicy food, like I do, I usually add a habanero or thai chile when I can get my hands on some. Today, I decided to pair the omelette with some cauliflower I had laying around and braise it with water. Additionally, I wanted to add basil today to the omelette for a fresh taste to take away from the oiliness of the omelette.
- 1 tbsp extra-virgin olive oil
- 4 eggs
- 1 tbsp fish sauce
- 1 handful of basil, leaves only
- 1 habanero, minced
- 1 cup cauliflower, cut
- 1 teaspoon black pepper
1. Heat pan over low heat (make sure it’s hot, usually 1-2 minutes). Prepare the basil, cauliflower and habanero.
2. Crack 4 eggs into a small bowl and whisk well.
3. Add habanero and basil into egg mixture and whisk well until everything looks consistent, save a few basil for the braised cauliflower.
4. Put 1 tbsp olive oil into hot pan, then add in egg mixed with habanero and basil allow to cook for 2-3 minutes over medium heat. Add black pepper then Flip omelette and cook for another 1-2 minutes.
5. Remove your omelette from the pan and fold in half.
6. Add cauliflower into the same pan over medium-high heat for 1 minute to sear.
7. While waiting for cauliflower to sear, add water to bowl you mixed the egg mixture in about half cup.
8. Put water-egg mixture you just made into pan to coat cauliflower, then cover the pan to allow the cauliflower to be cooked by steam
